Yuzu Omakase Saigon: A Tale Of Seasonal Delights

November 16, 2024

The rapid rise of Omakase restaurants and rife competition means restaurateurs have to work hard to stand out. However, this has also presented Yuzu Omakase with an opportune moment to solidify its position in the market, by offering a glitzy take on Saigon’s omakase scene.

Nestled within the vibrant “rising star” culinary district at the intersection of Ly Tu Trong and Thu Khoa Huan streets, Yuzu Omakase shines like a hidden gem amidst the bustling metropolis. Despite its “modest” and “discreet” facade, Yuzu has become a favorite destination for Saigon’s elite, where they gather to savor the essence of Japanese cuisine.

Also lighting plays an important role in defining the space at Yuzu. Overhead spotlights light up the kitchen like a stage, adding a palpable sense of theatre to the place.

Not So Subtle Sosaku

In a break from tradition, Yuzu Omakase offers sosaku-style omakase menus. This modern, creative style of sushi playful riffs on classic omakase dishes where clean taste and subtlety take center stage, and instead turns the spotlight onto bold flavors.

“First, Yuzu Omakase’s chefs will heavily research ingredients that are in season and available at the time” the team tells us. “This is the starting point from which the chefs start developing the menu, considering the main ingredients and accompanying spices, herbs and flavours of each dish. Then they carefully consider the order of courses – the flow and relationship between courses is paramount in omakase. They choose each dish with the intention of enhancing the flavor of the next.”

The Best of The Winter Season

Most recently the team has developed new winter menus. They still follow the same Yuzu Omakase concept. That means three set options available at varying price points. But the dishes and stories behind the menus match the new winter season.

We’ve included two special dishes that use Tarabagani Crab and Kinki Fish – both coveted winter ingredients. Known as “the king of delicacies” in Japan, Tarabagani crab is one of the most expensive seafoods in the world due to scarcity and the extremely difficult fishing process. Peak season, when crab meat is at its best, is short from November to March. Kinki fish often lives in the deep sea of Hokkaido island, so this fish is very rare and expensive.

There’s truffle on the nigiri, beluga caviar in the chawanmush, and also (unsurprisingly) yuzu punctuating the menu here and there.

What To Expect At Yuzu Omakase

We also expect to embrace a ‘Multisensory Journey’ at Yuzu. Beyond the delectable dishes, this menu at Yuzu Omakase invites you to immerse yourself in the essence of winter through carefully crafted details throughout the restaurant, including its captivating decor.

As such it’s no surprise that the team, when asked for their recommendations on what to order, suggests ‘The One’ menu. It’s pricey, at VND 10M, but Yuzu Omakase are offering something you won’t find elsewhere in the city.
